Ingredients
900gfresh fish mince (fiskefars) - or raw fish
1onion, finely chopped
1-2clovesgarlic, grated or crushed
1handfulparsley, finely chopped
1/2fresh chilli, finely chopped
1tbspfresh ginger, finely grated
1lime, juice and finely grated zest
2eggs
2tbspplain flour
100-200mlmilk
Salt and pepper
Butter and oil
Instructions
Mix the fish mince with the onion, parsley, garlic, ginger, chilli, lime zest and juice, eggs, flour, salt and plenty of freshly ground pepper. It is important to check that the mince is plain fresh fish mince, with no other ingredients already added. If you are using fresh fish, blend it to a smooth mince in a food processor and then follow the method above.
Adjust the consistency of the mixture with milk. Add a little at a time and stir it well into the mince. The amount needed varies a great deal - 1 dl, 1 1/2 dl or 2 dl (100, 150 or 200 ml) - so add milk until the mixture is soft but still holds its shape. If you are using mince or fish that has been frozen, it can hold quite a lot of liquid - so take extra care here.
Melt a generous knob of butter with a splash of oil in a frying pan.
Shape the fish cakes with a spoon or by hand, or drop the mixture straight into the pan. Press them lightly flat with the back of a spoon and fry until golden on both sides. *See the video above the recipe if you like.
Serve the fish cakes with rice, fried noodles, a crunchy fresh salad, an Asian-style cabbage slaw or similar.
