Instructions
Mix the ingredients for the marinade, adjust with lime to taste and set aside.Feel free to add a spoonful of warm toasted sesame seeds to the marinade – it gives a really lovely flavour.
Cook the noodles as described on the packet, then rinse them in plenty of cold water so they don't stick together. Leave the noodles with a little water in the bottom of a bowl or pan so they stay wet and don't clump together. Keep this water for adjusting the consistency later if needed.
Heat a good glug of oil in a frying pan or wok and brown the meat well, then season with freshly ground pepper. Set the meat aside on a plate.Hold off on the salt until the dish is finished.
Fry the mushrooms for 3-4 minutes in the same pan, adding a little more oil if needed.
Add the onion and fry for a couple of minutes, then add the other vegetables and fry for a further 4-5 minutes.
Return the meat to the pan, add the noodles and pour over the marinade, then toss everything together well.Add a splash of the noodle water if you find the dish too dry.
Heat the dish through quickly once everything is well combined, and season to taste with freshly ground pepper, more lime and, if needed, salt, soy sauce or oyster sauce.
Top the dish with the sliced spring onion tops, toasted sesame seeds and chopped peanuts, if using.
