Ingredients
1,2kgpork belly roast, rind on
Coarse salt
Freshly ground black pepper
Bay leavesoptional
Instructions
Score the rind thoroughly, without cutting down into the meat. If you cut into the meat, it can be hard to get the crackling crisp, as meat juices will rise up to the rind and make it soft.
Rub the pork belly and the rind with salt, making sure it gets well down into the cuts in the rind too.Season with freshly ground pepper if you like, and tuck bay leaves into the cuts in the rind if you wish.
Pour 100-200 ml of water into the base of your air fryer and place the joint in the basket. If the joint is uneven, prop it up with a little foil, a carrot or similar. It should lie as level as possible for the best result.
Cook the pork belly for about 45 minutes at 180°C, then turn up to 200°C and give it a further 15-20 minutes.
Let the pork belly rest for 10-15 minutes before slicing and serving.
