Ingredients
400gfresh apricots
200ggranulated sugar
1/2lemon, juice and finely grated zest
1/2vanilla pod
Instructions
Rinse the apricots thoroughly, halve them and remove the stones.
Cut the apricots into small dice, about 1/2 x 1/2 cm.
Scrape the seeds out of the vanilla pod and mash them together with a little of the sugar.
Put the diced apricots, sugar, vanilla seeds, vanilla pod, lemon juice and zest in a small saucepan and bring to the boil.
Turn the heat down to low to medium and let it simmer for about 15-20 minutes, until the apricots are soft and starting to break down.
Remove the vanilla pod and pour the jam into a scalded jar, rinsed with Atamon (a Danish preserving solution) if you like. Screw on the lid, put it in the fridge and let the apricot jam cool completely before serving.
